Bakery and patisserie design is one of the few business types where production and retail overlap inside the same envelope. A hot, flour-laden production area sits behind a clean, appetising sales area; if the relationship between them is wrong, either production stalls or the retail image suffers. In our Ankara patisserie projects we begin by drawing the boundary between these two zones.
The display cabinet is the sale itself. Product must be presented at eye level, at the right temperature and under the right light. Condensation on the glass of refrigerated cabinets reduces sales directly, so cabinet selection and ventilation are planned together. Display lighting must render products accurately and generate no heat — the wrong fitting softens cream and dulls chocolate.
Product placement follows purchasing behaviour. High-margin, impulse-decided items belong at the head of the queue line; small complementary products belong near the till at the end of it. Planned purchases such as bread and everyday baked goods can sit deeper in the space, because the customer is coming in for them anyway.
The production area is governed by hygiene and flow rules. Flour store, dough preparation, oven, cooling and packing are sequenced one way, and raw material intake must not cross finished-goods dispatch. Flour dust travels to every surface, so production is separated physically from retail and the transition point is kept controlled. Seamless slip-resistant flooring and wipeable wall finishes are essential.
